Thanksgiving

This Thanksgiving we stayed here in Manhattan and Kable's parents came to visit. It was short, but we loved having them while we could. Koy especially enjoyed the extra attention. We ate dinner at our friends the Balsmeiers. They had wonderful food as always. We brought our famous potato salad, that Kable now likes to make (I got the recipe from a past roommate), our famous rolls (Rhodes of course) and my famouse deep dish pumpkin pie. I had lots of requests for the recipes, so I think I will just post them here, if that's ok with everyone.

Deep Dish Pumpkin Pie
1 3/4 c flour
1/3 c packed brown sugar
1/3 c sugar
1 c cold butter, cut in sm pieces
1 c chopped walnuts (opt)
1 -16oz can pumpkin, about 2 c
1- 14 oz can sweetened condensed milk
2 eggs
1 t cinnamon
1/2 t allspice
1/2 t salt

Combine flour and sugars, cut into butter until crumble. Add walnuts. (I don't use nuts.) Reserve 1 c mixture; press remainder on bottom and halfway up sides of 12 x 7 in baking dish. Beat remaining ingredients, except reserved crumb mixture. Pour into dish. Top with crumb mixture. Bake 55 min at 350* until golden. Cool. Makes 8-10 servings.

Ellie's Potato Salad
6 med pototoes (2 lbs)
1 1/4 c mayo
1 T mustard
1/2 t salt
1/4 t pepper
1 c sliced celery
1/3 c chopped onion
1/2 c chopeed pickle
6 boiled eggs

Boil potatoes, reduce heat & simmer 25 min, drain and cool. Peel and cube. (I bake mine by poking holes in them and putting them in the microwave in a sack. I also leave the peels on.)
In large bowl, combine mayo, mustard, salt, and pepper
Stir in celery, onion, pickles. Add potatoes and sliced eggs.
Toss lightly. Cover and chill. Makes 12 servings.
